pasta lists

 

My Pasta Lists are part pasta menu, part pasta club and are comprised of different and delicious pasta shapes I’m working on. A handful of times a year I make big batches of different shapes or noodles (sometimes stuffed/sometimes not, usually colourful) and offer orders from these big batches to pasta lovers on my mailing list. That’s the ‘menu’ part. The club part is that I like to include cooking recommendations, sauce or sugo or ragu pairings, along with pasta notes and history that I come across from my pastaia practice and research. For being a food so ubiquitous, there is still so much we don’t know about the lands and peoples that gave us pasta. And much of what we do know, we owe to the oral histories shared with us, usually by women in their cucine for generations. For me, it’s important to resurrect this tradition in my own life and share what I learn with my community.
